I am finally getting to do something that has been on the bucket list. Cooking demonstrations! Everyone on the mountain knows how to cook and cook well. Monti della Tolfa is an untapped region of some of the best local ingredients and foods in Lazio. People come from Rome, Civitavecchia, Viterbi and towns all over Lazio to enjoy dining at one of the many trattorias. The ingredients do not have to travel far and much of the food is organically produced in Tolfa, Allumiere or La Bianca. Here we are lucky to have some of the best wines, olive oil, fresh cheeses, bread, meats , vegetables and so much more, grown and processed here.
Last Saturday Chef Antonio and I got together to plan a series of cooking demonstrations to highlight regional dishes of Lazio. On Sunday January 22 at 5pm Rome time we will be going live - Instagram Live that is.
We are both quite open to several challenges and willing to have a go at it with some fun. First my level of Italian is Antonio’s level of English! But cooking is universal so we thought we would wing it. Hey I have been it doing for 2 years! Being lost in translation every day has taught me that if I don’t laugh at the mistakes & daily misunderstandings then I would just end up being frustrated at my 20% fluency in the Italian language. So we have decided to have lots of fun while he teaches me how to prepare the local dishes from Lazio and Monti della Tolfa.
We decided to start out first with INSTAGRAM, simply because we can share it easily while trying to practice cooking in front of the camera. We hope to bring to you online classes soon. Antonio Morra is from a generation of Chefs. From the town of Tolfa, Antonio started out assisting his father in the kitchen of the trattoria he founded, Da Buzzico. Antonio travelled extensively through South America working in restaurants and as a private chef. He decided to return to Italy and his beautiful town of Tolfa to raise his family.
